Peach Honey--this one is yummy!!

We had a lot of leftover peach peels after preparing a bushel of peaches for preserving etc and wanted to do something yummy with them.

After searching google and browsing a ton of different recipes, we took the common approach and ingredients and played with it to make it just right.

This recipe is nice because you don't have to have an "exact" amount of peels...it will work with whatever you have AND it could be used for other fruits.

#1 Cover your peels with cold water until they can just float. Cook slowly until they are soft. (skim any foam off)

#2 The juice is what you want so strain your juice and discard the peels. We used a fine strainer and pushed down with wax paper to squeeze out every drop of liquid.

#3 Measure how many cups of juice you created and return it to the pot with 1/2 that much sugar (i.e. 4 cups juice, 2 cups sugar).

#4 Bring your mixture to a boil (skimming foam) until it is a honey-like consistency. I tested by putting some on a little plate in the fridge to cool and then could see what the texture was.

#5 Eat immediately or put in jars using approved canning method
